Quick post because we need to get to this delicious treat I made last week. Have you guys tried energy bites before? Becaues if you haven’t you need to stop everything, and go make them. It only takes 10 min to make (30 minutes to cool, though) and then you roll them up in balls. They only have 8 ingredients, but I added in some cranberries and had to take out flax seed (who owns flax seed??). I also used a little less honey, just because I used JIF pb and (according to Sarah) it’s pumped full of (tasty) chemicals and sugar. Of course, you could use any type of peanut butter and add in any extras.

The recipe calls for:


 

YIELD: ABOUT 3 DOZEN
NO BAKE ENERGY BITES
INGREDIENTS:

1 cup (dry) oatmeal (I used old-fashioned oats)
2/3 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flax seed
1/2 cup chocolate chips or cacao nibs (optional)
1/3 cup honey or agave nectar
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract
DIRECTIONS:
Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 20-25 balls.
